Ingredients

- 240g pasta flower
- A pinch of salt
- four tablespoons of olive oil
- 160 ml of cold water
Place all of the ingredients into a bread machine on a dough cycle and mix for about 10 min. Alternatively mix by hand and follow the technique above for making wax
After the dough has been made to run it through a pasta machine on the widest setting, we recommend using the widest setting for about 4 or 5 passes of the pasta. Reduce the setting by one notch and repeat. Keep this process up of 4 or 5 passes at each setting for reducing to the next smallest one.
We then used cookie cutters to cut out the dough and made a mixture of wilted kale, not make and vegan feta cheese as the filling.
To cook, gently pick up the ravioli with a slice and place into boiling water with a small amount of olive oil in. They will immediately sink and cooked when they rise to the top, usually a couple of minutes.
We then made a classic tomato sauce, there are plenty of recipes online for this, or experiment and make up your own!
