Caramelised Onion Vegan Quiche

Make the pastry as per our Simple vegan pastry recipe.

Roll the pastry out and line a greased quiche tin, use a fork to make some holes in the pastry, this will stop it lifting. Part bake at 180° C until the pastry has stopped being completely soft, probably about 5 mins.

Ingredients for quiche

  • One block of smoked tofu
  • 1 teaspoon of turmeric
  • 1 tablespoon of nutritional yeast
  • 1 tablespoon of gram flour
  • Soya milk
  • 1 large or 2 small onions
  • A splash of oil
  • 1 tablespoon of brown sugar
  • 1 tablespoon of balsamic vinegar

Method

Thinly sliced onions, place a splash of oil in a saucepan turn on to a medium heat and add the onions. Replace the lid and cook on low for approximately 30 min. The onions taste better the slower they are cooked so if you can turn the heat down really low and cook for 45 min that would be even better. The onions will be cooked when they are translucent and soft.

Add the sugar and cook for a couple of minutes to allow the sugar to caramelised. Add in the balsamic vinegar.

To make the quiche filling. Place the tofu, turmeric, nutritional yeast and gram flour in a food processor. Turn on and slowly add soya milk until you have a mixture which is reasonably runny but wouldn’t drip out of the bowl if turned on its side.

Take the part baked pastry base, pour/spoon in the quiche mixture, add the caramelised onions on top and bake at 180° C until cooked (listen to the podcast to find out our tips for knowing when the quiche is cooked).
